Mother, who was a Medical Technologist, came home from work one day with a recipe from the head tech whose name was Roy. Roy and his wife Lynne were (and still are I hope) among the kindest people I have ever met and Lynne was quite a cook too. The Laboratory where mom worked had many potlucks in the 40 years she worked there and she often brought home recipes whose authors ranged from Pathologists to Cytotechnologists but she seldom ever made any of them – this recipe was the exception. As I look at the paper in Roy’s handwriting, it is called Spinach Salad but it is hardly that although mom always prepared it in a 9 x 13 Pyrex dish and after refrigeration, cut it into squares and served it that way. We always loved it but I prefer it as dip so that’s how we serve it. It is delicious and although I’m not a big pretzel fan – it tastes perfect served with them.
Spinach Dip
Ingredients:
1 package of frozen chopped spinach drained and squeezed “dry”.
1 eight-ounce packages of cream cheese, softened
1 cups shredded cheddar cheese
1 cup mayonnaise
¼ cup horseradish sauce
1 bunch green onions, chopped and separated
Directions:
Put all ingredients except for a few of the green onions and mix well.
Place dip in a bowl and cover tightly, refrigerating for at least 3 hours and best overnight.
When ready to serve, put in serving dish and sprinkle leftover green onions over top.
Serve with pretzels, chips, vegetables or whatever you choose. Enjoy!
Now, as promised I have a giveaway – in fact, I am having THREE giveaways! First, I am giving these Mason jar measuring cups away to my loyal blog followers who do not have a blog or community page on Face Book. I wish I could gift each and every one of you but I can’t afford that – I can afford this lovely Mason Jar Measuring cup set.
All you need to do is comment in the comment section telling me what you like about my blog and then scroll back up to the Rafflecopter titled Mason Jar Measuring Cups and click the “I Commented” link. You will be entered! Only one comment per reader please. That’s it – nothing else. I will announce the winner in about a week.
Aren’t these lovely soup bowls? I was lucky enough to order some for the blog last week and surprised that when they arrived, that there were four of them instead of two. Sometimes I read too fast and don’t get everything on first glance. I don’t need four bowls but they are so pretty I thought I would offer the remaining two to my loyal friends who are Bloggers and/or have Face Book Community pages. I can never repay all of you for the advice, help, promotion, inclusion in joint ventures, and wisdom that you have given me – the best I can do is have a giveaway with each of you having an equal chance to win, that is, if you want them. All you need to do is comment in the comment section then scroll back up to the Soup Bowls Rafflecopter and leave me the name of your blog. That’s it – you are entered! I will announce the winner in about a week. a Rafflecopter giveaway
The last giveaway is over on Face Book. Whether you are a Blogger or Face Book Community page manager who follows my FB page, or FB follower with none of those, you can enter to win the Mason Jar Measuring Cups over there – all you need to do is comment! I will announce the winner of that giveaway at the same time.
Last but not least is the disclaimer or non-disclaimer as it were: I bought all this myself making me the sponsor so I will mail them out once the winners (who all have 24 hours to respond or I will choose another) respond! Good luck!

Hey Kelli π
Thanks for the chance to win lovely soup bowls. I know shipping can be an issue to Canada so if that is a concern I understand! Love the Spinach Dip by the way! I am going to make some this weekend for our daughter’s going away supper.
Kelli
Nope – not a problem unless it is for Canadians – whatever I need to do to get them to you, should you win, we can work something out I”m sure. Glad you like the dip – and I’m sure you will love it!

I like the spinach dip recipe and will try it over the holidays as I have everything I need and it is not the usual spinach dip recipe.

If for no other reason, just sharing the “Knock Your Socks Off” soup would be enough! However, there are many other reasons besides that.

I made a spinach dip to take as an appetizer for a Thanksgiving lunch we shared with friends. Your mother’s recipe from Roy is one I haven’t heard of but I know I would enjoy it.
Stacy
What a great flavors for a dip, Kelli! I imagine this just gets better and better the longer you can leave it to hang out in the refrigerator before serving. I have a few recipes like that that I have adopted from other people and I wonder sometimes if they are still making them as often as we do. π
Liz
You are so kind and generous, Kelli! I’d love to win these bowls because they’re RED!!! Hope you had a terrific Thanksgiving.
P.S. your spinach dip sounds terrific!
Donna Currie
Hmmm. What I like. I guess what I like is that you’re easy to read. I don’t have to parse the sentence and wonder what the heck you’re trying to say. Clear and simple. Not meandering, like me π
Donna Currie
I’d like the bowls, because they’d be stunning in photos. Maybe not tomato soup. But really good for potato leek. π
carol R
I love the bowls. They would match all my kit hen items =)
Nancy @ gottagetbaked
As much as I looooooove spinach dip, I’ve never made it before. For some bizarre reason, I think that it’s too hard but not anymore, thanks to this recipe! I’m hosting a few Christmas dinners this year – I’m adding this to my menu! Kelli, you should gather all those recipes that your mom collected and put them into a cookbook with a hilarious name that no one can pronounce because it’s full of medical speak.
Tina W
This spinach dip is WAY different than the one I grew up with, but in a creamy spicy delicious way!
I love your recipes – nothing too foo-foo or fussy, just good yummy food!
Brandi Davis Bryant
