Mother, who was a Medical Technologist, came home from work one day with a recipe from the head tech whose name was Roy. Roy and his wife Lynne were (and still are I hope) among the kindest people I have ever met and Lynne was quite a cook too. The Laboratory where mom worked had many potlucks in the 40 years she worked there and she often brought home recipes whose authors ranged from Pathologists to Cytotechnologists but she seldom ever made any of them – this recipe was the exception. As I look at the paper in Roy’s handwriting, it is called Spinach Salad but it is hardly that although mom always prepared it in a 9 x 13 Pyrex dish and after refrigeration, cut it into squares and served it that way. We always loved it but I prefer it as dip so that’s how we serve it. It is delicious and although I’m not a big pretzel fan – it tastes perfect served with them.
Spinach Dip
Ingredients:
1 package of frozen chopped spinach drained and squeezed “dry”.
1 eight-ounce packages of cream cheese, softened
1 cups shredded cheddar cheese
1 cup mayonnaise
¼ cup horseradish sauce
1 bunch green onions, chopped and separated
Directions:
Put all ingredients except for a few of the green onions and mix well.
Place dip in a bowl and cover tightly, refrigerating for at least 3 hours and best overnight.
When ready to serve, put in serving dish and sprinkle leftover green onions over top.
Serve with pretzels, chips, vegetables or whatever you choose. Enjoy!

I love that you use ingredients that most everyone has in their cupboard. Your recipes are clear and easy to follow and I’ve had good results with the ones I’ve tried. I like the spinach dip recipe and will try it over the holidays as I have everything I need and it is not the usual spinach dip recipe.
If for no other reason, just sharing the “Knock Your Socks Off” soup would be enough! However, there are many other reasons besides that.

I made a spinach dip to take as an appetizer for a Thanksgiving lunch we shared with friends. Your mother’s recipe from Roy is one I haven’t heard of but I know I would enjoy it.
What a great flavors for a dip, Kelli! I imagine this just gets better and better the longer you can leave it to hang out in the refrigerator before serving. As much as I looooooove spinach dip, I’ve never made it before. For some bizarre reason, I think that it’s too hard but not anymore, thanks to this recipe! I’m hosting a few Christmas dinners this year – I’m adding this to my menu! Kelli, you should gather all those recipes that your mom collected and put them into a cookbook with a hilarious name that no one can pronounce because it’s full of medical speak.
