Rockin’ Crème de Menthe Brownies

 I love brownies and this recipe is great! Sometimes I have enough time to make homemade and I use this recipe, although the last time I posted about it I was making Halloween brownies here.  Here’s the recipe!

Rockin’ Crème de Menthe Brownies

Ingredients:

8 eggs
2 cups butter that has been melted
4 Cups of Sugar
1 ½ Cups of powdered cocoa
3 Cups of flour
4 teaspoons vanilla
2 teaspoons of salt

2 bags of Andes’ Crème de Menthe Baking Chips

Directions:

1. Beat eggs in mixer.
2. Add sugar, vanilla, salt and beat for one minute.
3. Pour in melted butter and mix.
4. Sift flour and cocoa together and slowly add to wet mixture.

5. Spread into a 9 x 13 pan that has parchment paper greased in to the pan.
6. Bake at 350 F for 20-25 minutes – start checking then – it could take up to 45.
7. While they are still piping hot, pour the 2 bags of Andes’ Crème de Menthe Baking Chips on top of the brownies and spread them out.

8. Using an off-set spatula, spread the melted baking chips (and they will all melt if you put them right on) across the entire pan of brownies.

9. It will take about 2 hours sitting out or about an hour in the fridge for the baking chips to harden back up.

I always use Reynold’s Wrap on the inside of the dish – the one that is parchment paper on one side and foil on the other because it makes for nice clean up. See how easy it is to pull out of the pan?

The Andes’ Crème de Menthe Baking Chips melt well and spread nicely. They also make peppermint baking chips so you can use those if you like.

Then, you must wait! It will take about 2 hours sitting out or about an hour in the fridge for the baking chips to harden back up. So, they aren’t the fabulous completely homemade Crème de Menthe Brownie recipes I’ve seen all around the Internet – but they are quicker, easier, and they taste fabulous! When you’ve got a classroom party or work potluck you can whip these up pretty darn quick especially if you use a boxed brownie mix. Enjoy!

    Your brownies sound delicious. I have never seen the Reynolds Wrap you mentioned…I’m going to have inquire at my grocery store if they can carry it.

    I do the same but just use plain baking parchment. Best thing ever invented for easy removal of cakes from pans! These look wonderful, Kelli. My younger daughter is a sucker for anything chocolate and mint so I will be making these soon. My girls will both be home for the holidays in two weeks. Yay!

      Thank you Stacy! Someone picked them up because it is 3:45 in the morning here and I have about 200 times my regular views – most from Canada – already! These are really great and they don’t have any liqour in them so it’s good for kids! I know you are excited to have your babies home – I know when I don’t see Top Girl for even a week, it makes me alittle goofy! 🙂

      Gosh Anita, I thought NYC had everything! They are exactly like the Andes’ Mints but they are tiny little things and the peppermint are red instead of green inside. My friends say they are great in coffee and I love it in hot chocolate! yes, you should visit with your grocery manager!
