The weather is finally warm and beautiful here in the land of the Sooner. In fact, it is going to be in the 90’s for the next few days….that might be a little too hot for me! Nonetheless, we are doing all things summer-like at the house these days like grilling burgers, which is one of my favorites. Look at the pretty picture Mr. Picky Eater snapped when he was out checking the mail.
We live in a cul-de-sac at the end so we share our little mailbox piece of property with the neighbors where The Professor (name of our next door neighbor because we cannot remember his name and he IS a professor at OU) had some iris planted about two years ago. This is a beautiful one as well.
Yesterday I was on the website allrecipes.com trying to find something special for my tanqueria tacos I am fixing to celebrate Lawyer Boy’s birthday and Cinco de Mayo tomorrow where I accidentally came upon the title of a recipe called: Fat Sam’s Meaty Melted Man Dip. There was no photo but who could resist a recipe with a name like that one? Not me. As I read the ingredients out loud, Top Girl and Son-in-law were making sounds like they would find the recipe tasty. Since I already had all the ingredients – I and Fat Sam were going to get to know each other! We liked it so much; I thought I would share here with you today. I will be posting the taco recipe later today or tomorrow and on Friday, please be watching for my post because I have a big giveaway with some of the coolest nicest things I’ve ever had the pleasure of using. One is so unique I had never heard nor seen anything like it before……look for it! Meantime – enjoy Fat Sam’s and his dip because while it starts out like a dip I’ve had, it takes a turn I had not tasted before.
Fat Sam’s Meaty Melted Man Dip
Ingredients:
1 one-pound package of regular breakfast sausage (I only had “hot” sausage and it was fantastic!)
2 packages of Taco Seasoning (divided)
3 Cups warm water (divided)
1 Box (2 Lbs.) Processed Cheese
1-4 Tablespoons Hot Sauce (Optional and to your taste)
Sliced fresh Jalapeno’ **we added these while cooking but was not called for in the recipe – we like it hot!
Directions:
Break up and fry the sausage, drain.
Put sausage in a sauce pot with one package of the taco seasoning, stirring for a few minutes.
Add 2 Cups of the water along with the other seasoning packet; bring to a boil then down to a simmer.
Allow to simmer a few minutes then begin adding the cubed process cheese a few cubes at a time, stirring constantly.
If it gets too “thick” to move the spoon with some ease, add last cup a water a little at a time until desired consistency is reached – it should be the consistency of Queso.
After all cheese is added, put in 1-4 Tablespoons of your choice of hot sauce stirring in well.
You can keep it in a crock pot set to warm or move to another burner (not the one you cooked it on) and set to lo or low flame in order for it to stay warm.
Store in a lidded container in the fridge.

I love those old fashioned irises. So, do you think the weather will hold or will I be covering up tomato plants next week? LOL. I need to do some recipe searches as well for a Cinco celebration. I know that dip is quite worthy,

I don’t know who Fat Sam is either, but his dip sounds like cheesy perfect! And, of course, I completely agree with your addition of extra peppers! Never mind the chips, I could eat that with a spoon. It would also be fabulous in a baked potato!
