This cake is so easy and so pretty! I first saw it on the Betty Crocker website and that recipe said I could find the original cake by Arlene Cummings at Cooks with Sugar. I could find lots of really cool Bundt cakes that are like this but I could NOT find this one. I gave you the link so you could look for yourself – I made mine a little differently anyway. Here ya go:
Rainbow Bundt Cake plus bonus Peeps!
Get yourself one of these cake mixes:
Turn it over and use the “egg white only” recipe:
Makes about 4 cups of batter. I took out 3 Cups and using food coloring, I mixed up 3 different colors. I made cupcakes for Mr. Picky Eater with the last cup.
Cooked it up in my mini-Bundt pan and turned it out to let it cool.
Using regular vanilla frosting, I put a little in 3 different bowls.
First, I heated the leftover white for 8 seconds in the microwave and poured it over the cake.
Then I drizzled the purple (looks blue) over.
Then the pink.
Then the yellow.
Yes, then I let the Peeps see their ancestors! (I know – it’s a sickness) But if you LIKE it, you can see more here.
Pretty festive for a 2 hour investment including 45 minute cooking time.

Kelly, you are so funny. I know we’d have a ball playing with our food together. I always make my turkey dance on thanksgiving after washing it, hehe. I love the colors of this cake. Poor Mr picky eater, only getting cupcakes, that means more cake for the rest of us.

I just love bright colors and I could make those perfectly match (I’m a matchy-matchy kind of person) so I could not resist! But you know what? Using those food color gels did not affect the taste of that white cake at all….I hate it when food coloring gives food a “taste”. I almost called it my groovy, mellow, retro cake! 🙂

Just about! Over on my FB page I have a whole photo album with my peeps all posed with different stuff. Even more than my post – I’m totally enamored by those sweet little marshmallow candies. Those food colorings are some fancy-smancy and fairly expensive variety and they really do make bright colors! BTW – a hayride (saw your comment on Pam’s blog) is where you throw a bunch of hay on the back of a trailer or flatbed truck and someone drives it around the country. Usually held in the fall (here in Oklahoma) it’s generally cold and if it’s teenagers and above, there’s lots of “cuddling” going on! 😉 Ours are usually followed by a weinie roast (hot dog on a stick at a bonfire) and s’mores. Our favorite time to have a hayride is Halloween.
