New Year’s Eve has always been fun with my mom. It’s full of junk food and movies and staying up late. Well, late can be relative. I am so thankful that Netflix has an anytime countdown for kids. I bet we all end up in bed by 11.
One of our favorite New Year’s Eve treats is queso and chips. It’s easy and keeps warm in a crock pot for extended “picking.” Picking is where you lay out a spread of food and folks can just go pick up a bite or two and then go back later for a little more. That’s what we call it, anyway.
Crock Pot Italian Sausage Queso
Ingredients
1 Can of Rotel (drained)
1 pkg (16 oz) Velveeta, cubed
Optional 1 lb Italian Style Sausage
Optional l Jar of Green Chili Sauce
Directions
Stir the queso occasionally. If you need it to cook faster turn the temperature up to high for a while.
Crock Pot Italian Sausage Queso

- 1 Can of Rotel drained
- 1 pkg 16 oz Velveeta, cubed
- Optional 1 lb Italian Style Sausage
- Optional l Jar of Green Chili Sauce
Instructions

Brown the Italian Sausage in a skillet until fully cooked.

Put a Reynolds Crock pot Liner in the crock pot and turn crock pot on low.

Add all ingredients.

Stir the queso occasionally. If you need it to cook faster turn the temperature up to high for a while.

Keep an eye on it. Don’t let it cook for too long on high. No one likes scorched queso.
Recipe Notes
Serve with Chips, soft pretzels, or anything you might dip in melty cheese.
