This Chicken Waldorf Salad is an oldie but goodie. But first, my heart is heavy and I must tell you that Lillian from Lillian’s Cupboard blog has passed away unexpectedly. She was an 85-year-old dynamo that was full of love, recipes and knitting! She led a great life from start to finish in Ohio and became my close friend over the years. I am so sad. She had just posted on Sunday and I commented. She never even got the chance to respond. Her brownie recipe is the most requested dessert in our house. Her daughter is going to keep the blog up for a few months so people can find their favorite recipes – like me!
It’s snowing here today and there’s a pot of chili on the stove and some cornbread in the oven as I write this. It seldom snows here in November so I am expecting a cold and snowy winter this year! Let’s get on with the recipe for an old salad that my dad loved and expected on each holiday table.
Rotisserie Chicken Waldorf Salad
Ingredients
- The meat of one half of a rotisserie chicken
- 1 stalk Celery Thinly Sliced
- 1 whole Apple Chopped
- 1 Cup Halved Grapes
- 1 Cup of Chopped Pecans
- 3/4 cups Mayonnaise
- 1/4 cup Sour Cream
- Salt and Pepper to taste
- 1 Tablespoon lemon juice
Instructions

Slice chicken into bite-sized pieces.

Place chicken, celery, apple, grapes, pecans, mayonnaise, and sour cream in a large bowl.

Mix until well combined.

Taste and add salt, pepper, and lemon juice if needed.

Serve in a dish as a side or as a sandwich that dad loved!
