Strawberry Chocolate Poke Cake

Do you like poke cakes as much as my family? They all do and this is a new creation of mine that I’ll be serving on Valentine’s Day – and you can too! It’s easy and does not take any special skill, that’s for sure.  This cake is Strawberry Chocolate Almond Coconut Poke Cake to be exact.

This is all you will need:

1 box strawberry cake mix and all the ingredients needed on the back
2 boxes Jell-O Almond Joy chocolate like this:

Or 1 regular instant Jell-O Chocolate if you don’t like Almond Joy pudding!
1 tub of Cool Whip

Yep – that’s it. Then do this:

After the cake is baked, let it cool completely.
Take a wooden spoon and poke holes all over it.
Mix up the pudding as directed on the back and let sit 5 minutes.
Spread the pudding on top and really get that pudding down into the holes – as you can see I didn’t do such a great job.
Then spread Cool Whip on top and place in the fridge for a couple of hours.
Then you can eat it up just like PacMan!!!

    I’ve never seen Almond Joy Jello pudding in my store, but some of my family doesn’t like coconut, so I’d be going with one of the chocolate flavors anyway. Are you using an 8 oz. tub of Cool Whip?

    Almond Joy pudding! That’s one of my favorite candies but I’ve never seen it in pudding form. Although I must confess, I’ve never looked. When the girls were at home, I kept instant chocolate pudding mix in the cupboard but I really haven’t bought any since they went off to school.

    Your cake looks very tasty, Kelli! I especially love the fresh strawberries on top!

    Ok, I can see that I will be on another pudding quest — to find the Almond Joy instant pudding, like several go your other friends. It took me forever to find thr Pumpkin Spice. Believe it or not, I accidentally saw it in a Dollar General Store when I wasn’t looking for it. Maybe I’ll look there first this time!! I’ll have to find it, though, because we both love Almond Joy (and Mounds, too!). This just looks too good to pass up. Thanks again, Kelli. BTW, did you know that I prefer cold cake? LOL. (room temperature cake is good, too though)

      There is also a Mounds pudding – I got mine at Crest but I bet you could find it at Wal-Mart.

    Every time I see “poke” cake I think, “Poke??? as in OSU???” Since I know you live near the other university in the state, you probably don’t make that connection. LOL

      One of the boys got his undergrad degree at OSU – but redeemed himself (in his father’s eyes anyway) when he got his law degree at OU. So, most of the time I DO think of the Pokes.

    Kelly, when you baked the cake, did you add the extra egg, change the water to milk and the oil to butter?

      Not this time but it was only because Rocket eats all the eggs in the house and I only had the exact amount! ๐Ÿ™‚
