Easy Apple Fritters – Kellis Kitchen

Hi all – I haven’t been around lately but remember, I told you I was having a difficult time at work – but all that is over, finally!  I made a big decision to leave my position after almost 20 years of public service.  I feel very good about it and am excited to move onto the next chapter of my life.

Now that we’ve got that out of the way – let’s get on with this really easy recipe!

Easy Apple Fritters

Ingredients:

Powdered sugar for sprinkling

1 2/3 Cups Pancake Mix

4 Tablespoons water

1 Can apple pie filling (or cherry or strawberry – whatever you like)

2 teaspoons of Cinnamon (optional but we like it)

Oil for frying

Directions:

Dump the pie filling in a bowl like this:

Mix the water into the flour and cinnamon:

Add in the apple pie filling and mix it up – it will be VERY thick!

Heat up the oil in a saucepan over medium hot heat to 325F.

Drop by spoonfuls into the hot oil (don’t crowd) and allow to brown on the bottom.

Flip over and brown on the other side.

Using a slotted metal spoon, lift out the fritter and allow to drain on newspaper.

After cooling about 5 minutes, sprinkle with some powdered sugar.

Those look divine! (They should be serving those at ballparks and carnivals!) ~ I think we all know how important it is to be content in what we do. I’m one of the lucky ones who sees my Mondays as Fridays. I wish you well in your endeavors, and hope that you too start having Fridays a lot earlier in the week.

Made these delicious fritters! Better than the 19 ingredient ones!!!! Next time I would cut apples up to smaller pieces and maybe cut apples in half. All according to your taste. I drizzled powdered sugar icing while still warm. Made the fritters 3 bite size!!!! DELICIOUS and EASY BREEZY! Thank you!!!!
