A few weeks ago, Mother Kalamity brought me four quarts of strawberries that she and her friends in the Land of Old had worked up. She put them in our freezer and told me she wanted me to make jam for them “whenever I could get around to it”. That was a good thing because I had so many things going on there was no way I could get them done right away. She gave me a call last week and asked when I was going to get around to it. Hmmmmm………okay mom, I’ll do it this weekend. I know these ladies love plain strawberry jam and nothing fancy so that’s exactly what I made. I was able to make two full batches which make three cases of the smallest jars. They prefer them because they believe it stays fresher that way. Doesn’t it look good? YUM!
Strawberry Jam
5 Cups sliced strawberries
7 Cups sugar
1 box powdered Pectin
1 pat butter
Directions:
Place strawberries, pectin and butter in non-aluminum pan and stir until a rolling boil is achieved.
Pour all sugar in at once and continue stirring until a rolling boil is achieved again – then allow to boil for 60 seconds – don’t skimp!
Take off stove and ladle into sterilized (in dishwasher) jars.
Top with flats that have been simmering in water on stove.
Screw tops on tight and place in a simmering water bath for 10 – 15 minutes.
Take out and allow to cool in a draft free environment for 24 hours.

Sunday I decided to serve the jam with some homemade biscuits. Only thing is I have never made any. I searched the internet for an easy sure-fire recipe. I found one at Plain Chicken. Stephanie always comes up with the greatest recipes! I made 7 UP Biscuits. So easy and I made them well the very first time!
7 UP Biscuits
The ingredients are:
Bisquick – 2 cups (I used Jiffy and I had to use about 2/3 cup more)
½ Cup Sour Cream
½ Cup 7 UP
¼ Cup butter (for melting in bottom of pan)
Directions:
Turn oven on to 450 F.
Cut the sour cream into the biscuit mix.
Add 7 UP and mix lightly.
Put the butter into the pan and put it in the oven to let it melt – I used an iron skillet.
Sprinkle some biscuit mix on the table and pat the dough out – don’t roll it.
Using a biscuit cutter or glass, cut the biscuits out.
***Tip: DO NOT twist the cutter – just lift it straight out. If you twist, it will make the dough tough.***
Place biscuits in skillet and place in oven for 15 – 25 minutes or until golden brown.
These are fantastic! My husband loved them. In fact, he said he was at a concession stand yesterday where a woman said she made them with 7 UP and they were raw so he wasn’t thrilled I made them, but now he loves them!

Um, yum! Strawberry jam is the best! I’ve never made from scratch biscuits, but these look SO EASY and really delicious. Those will need to be made for all my jam soon!
I already have the nano canning basics one…. so I’m going to say that, if I should win, I’d like to have the specialty jams, jellies, and marmalades. This canning thing is addictive 😉

oh yum! am impressed with your jam-making skills 🙂 It’s a lot of work and though folks say it’s easy, I’ve found it not to be. Brewing up a pot of tea with this post because those fluffy biscuits and that lovely sweet jam need tea to accompany them. You remind me again that I need to post the “from scratch” biscuit recipe I always make since not everyone can buy the mix. It came to me through my aunt from her mother-in-law, a dear Mississippi lady who never actually used a recipe. My aunt and I quantified it together and I wrote it down. Now, after years of practice, I just sort of wing it too. 🙂

I remember Mickey, my mother-in-law (former) telling me that once she and Pete went to visit an uncle of his when his wife was sick. Mickey asked if she could do anything for him and he asked her to go in there to whip up some biscuits and gravy. She looked for the can in the fridge but couldn’t find any. So when she asked, he told her “just to mix a few things up like his always did” – guess that lady didn’t have a recipe either! 🙂 Would love to see yours!

Good to hear that your mama is still out and about. Have you ever heard of Strawberry-Rhubarb jam? Jenny bought a jar for me and I haven’t had anything to go with it, so haven’t opened it yet. Strawberry-Rhubarb pie is one of my favorites, so I’m sure that’s why she bought it. (She also got Maine Blueberry Jam, Red Pepper Jam and pure maple syrup for us while she was living in Boston!!) 🙂

What is the purpose of the 7up in the biscuits ? They sure look good and would love to

Noticed a lot of recipes lately are using Dr. Pepper !!! But no one says why they use it !!! just wondering…..does anyone know ????/

Mona – the 7up is mostly about the carbonation and how light it makes the biscuits. It helps them to rise long with the stuff in the biscuit mix. The dr. Pepper (I’m am a lover of Dr. Pepper) is about the “sweet” and it is less “carbonated” than coke. It’s also less harsh tasting. Dr. Pepper makes a great braising liquid for slow cooker pork. I think that might be it! 🙂

I love love love these killer biscuits! Yours look amazing. I kinda did my own thing, and used the melted butter in the pan, when I made them too…not realizing others were already doing that.
