Hi everyone! How are you doing? I hope everyone is doing well and enjoying the weather you are having. I’ve been enjoying just being alive! I don’t have much energy but what I do have, I give it all with gusto! I’ve been trying many recipes because now I must have a low sodium diet – 2,000 MG or less per day but not less than 500MG. Also, I must drink a certain amount of liquid including cereal milk and watermelon. Plus, I have to weigh every single day from now on……………..such fun stuff!
So, I decided that while I was willing to eat low sodium, I didn’t want to eat weeds and sticks for the rest of my life either. I bought some books tried some recipes, sent family and friends to all the different grocery stores here in town and in towns near us to find certain products………….some just have to be purchased online through grocery delivery melbourne. I’ve got 2 or 3 really great recipes that I’ll be sharing with you over the next few days and there will be more to come.
I’m taking regular old tasty recipes and making them with low sodium ingredients – I will tell you out to the side what I used to make it low sodium but it’s just regular food and first up is this delicious slow cooker honey garlic chicken — you are going to love it!
Slow Cooker Honey Garlic Chicken with Rice
Ingredients:
4 skinless, boneless pieces of chicken — I get mine at a grocery store that does no inject salt water into meat.
1/2 Cup Soy Sauce — I used Kikoman’s Low Sodium Soy Sauce – which has 40% less sodium.
1/2 Cup Ketchup — I use Heinze No Salt Ketchup
1/3 Cup Honey
3 Cloves Garlic
1 teaspoon dried basil
Lay chicken in the bottom of the slow cooker.
Whisk all other ingredients together and pour over chicken.
Cook in slow cooker for 4 – 6 hours.
Serve over Rice, Quinoa or mashed potatoes.
How easy was that? We have eaten it several times since I discovered the recipe and we love it each time! Go ahead – try it, you’ll love it!

Hi Pat — I’m sorry, I don’t know the exact sodium I just used all ingredients as no or low sodium. What I found was that using all low or no sodium ingredients in a recipe and then not adding any salt at all plunged my sodium level into a too low level so the doctor said either do one or the other. I continue to use no and low sodium ingredients and then I use kosher salt lightly.
