There are several Three Envelope Slow Cooker Roast recipes out there and we’ve tried them all – just so I could bring you the very best one! It sure is a good one and a recipe you could throw in on the way to church Sunday morning and have ready in time for Sunday Supper. The gravy is to die for and the roast and vegetables are perfectly seasoned.
These are the three envelopes that you need:
Three Envelope Slow Cooker Roast
Ingredients
1 envelope of brown gravy
1 envelope of dry Italian Dressing
1 envelope of Lipton’s Onion Soup Mix
Put the roast in the slow cooker with some cut up potatoes, carrots and onions.
Sprinkle the contents of all three envelopes on top – don’t worry about being even or equal just throw it on.
Pour over 2 cups of water or chicken broth.
Put the lid on and turn it on high for 6 hours or low for 8-9 hours.
It comes out so moist and tender – Mmmmmm…..
Ta-Da!
I am a little embarrassed about the photos but Mr. Picky Eater, Wonder Boy, and the Son-in-law attacked it quickly before I was able to get photos – so I salvaged what I could. At least you know it’s really delicious because 10 minutes after that every single bit of it was gone! So try it, you’ll love it like we do! HEY! Check me out along with other wonderful recipes at The Weekend Potluck!!

Someone was just telling me about this technique (I live in a cave). Looks fantastic, Kelli!
These three are really great – the ones with Hidden Valley Ranch dry dressing mix — we didn’t care for even though we love the dressing!
This was the most flavor filled pot roast I have ever had. I cut the roast in 2″ thick pieces cutting across the roast salted and peppered during the browning of the meat, I put 4 large dashes of Worcestershire sauce over the meat and then emptied the packets over the meat and I used 2 c.beef broth and cooked on low for 10 hours. It was very tender and the veg’s were well done but not mushy. This is a keeper.
How big of roast? How big of roast?
Hey John…she mentions in another comment that it was a flat top cut of chuck roast about 3 to 3.5 lbs.
yust made this recipe, Fantastic, so easy to make.
Great! I’m so glad you liked it. I made this last week. It’s in our regular supper rotation!
Yum! I love the ease of this recipe, plus I always feel like I MUST try every crock pot recipe out there. Definitely going to try this one too! 🙂
This sounds really good.
Sounds wonderful and nice and easy!!
I knew you would love this one! It’s great!
I never know what to do with roasts! I honestly just started buying them to make for my family (a little late start for me on that part). This look great and perfect because I’m a slow cooker addict! Can’t wait to give this a try! I’d love for you to come link up with us over at Throwback Thursday link party!
I know you’ll like it – thank you for the invitation – I’ll come over!
I think you were lucky to get the pics that you got b/c it looks delicious. I’m surprised there was anything left to photograph.
Gosh – you know, it only took 10 more minutes for it all to be gone. Even Rocket, who doesn’t like red meat much, ate it!
I also add pepper rings on top of my roast. They add amazing flavor to the already great flavors.
It sounds delicious! I will do that next time. Thanks for the tip!
What are pepper rings?
A pepper ring is found in jars near the pickles — pepperocini peppers cut into rings.
I have an eye round in my freezer that I need to roast very soon. Can this cut of meat be used in this recipe as well?
Yes! And the best part is that the slow cooker will tender that meat right up! Eye of round can be tough sometimes — this will fix it!
It looks yummy. I assume you use a chuck roast.
Yes I did but just about any cut will do!
Just made this, it was absolutely delicious. My husband said it was the best roast he’s ever had, and his mother was one of the best cooks I’ve ever known. Will definitely pass this recipe on to family/friends. Thanks
Thank you Rose! I really appreciate your encouragement and your husband’s happiness!
Can the meat be frozen when put into the crockpot?
It can but you will most likely have to add an hour to 2 hours to total time cooking. I’ve done it before and it’s been great!
Sounds delish! Is it really chicken broth or beef broth we need to add to roast? Thks
It’s really either one — whichever you have on hand and honestly, I have just used water in the past. It’s not as rich tasting but it works in a pinch just fine and no one seems to notice the difference. Thanks for dropping by! Kelli
I was just wondering how big of a roast did you use? This sounds yummy and will have to try it.
Hi Sheila! Well — honestly I don’t really pay attention to the poundage – just the size. Big enough for it to take up all the room in the slow cooker but not so large that it touches the sides. that’s what size I would get! Hope that helps! Kelli
Looks great but we’re on a low sodium diet in our house. Amy idea what the sodium count is?
I understand the low sodium diet because I have to watch mine as well nowadays and this post was made before I was asked to start watching it. What I do is when we are having this, I watch my intake on the day before and day after much more closely so I don’t have to worry so much on that day. Thanks!
What size roast?
I would say about 3 pounds — I prefer “flat top” roasts, not those huge thick hunks of meat. Also one that is about the size of my slow cooker but wouldn’t touch the sides. Maybe 3 1/2 pounds. Something like that. I honestly have never paid attention to what it weighs — I just judge the size when I’m in the store.
I didn’t read through all of the comments. But instead of the dry Italian dressing mix, I use a package of Hidden Valley dry dressing mix. And I substitute either beef broth of beef stock instead of the chicken broth. Just mentioning this, in case someone might have these ingredients on hand and wondering about substitutions.
Thank you Jeanne! I appreciate you adding to the recipe!
Can this be done with a pork roast?
Hi Jane — Although I have never done that before I”m sure it would be delicious too!
I always use pork roast and it’s delicious!
It looks like you also put in potatoes, carrots and more onion is this the case? and if so did you put them in the pot from the beginning or half way thru
Hi Jocelyn — Yes, I put in carrots, potatoes and onions. Generally, I always put them right in with the meat and envelopes of stuff. I put the onions on bottom and then place to roast on top so it sits off the bottom of the slow cooker then all the rest all around. It works great for me!! Thanks!
Do you sear it first? Is it really tender? I always have a problem with that when I do a roast in the crock pot
Hi Brandi — yes, I always sear the meat first and it is always fork tender! That’s why I like the recipe so much. I really hate a tough roast — especially since they cost so much these days. Thanks for dropping by!
Thanks Kelli! Can’t wait to try it!
Would a round or rolled roast work for this recipe? I dont use these cuts of roast and im not sure if they shred when cooked long enough.
Sure it would! Any cut would work just fine. I think I ‘ve used them all in the past!
Your recipe came through in a Pinterest feed. I was wondering what cut of beef you used. I am the worst slow cooker roast maker. Thank you.
I a pretty particular about my roasts. I choose the “old-timey” version of roasts that my Nana and mom always made – – they are called a flat- top roast. While it can be any size horizontally, it is no more that 3 inches thick and I prefer 2 inch thick roast. Just look around the meat section and you can usually find at least 1 that meets these dimensions! Thanks and good luck!!
Suggestions:
(1) Add above recommended roast details to your recipe. I scrolled thru many comments in search of info on type(s) of roast used.
(2) Add the fact that you layer a bed of onion (slices/wedges?) beneath the roast.
Looking forward to trying this! Thanks!
Wonderful, I used a Chuck roast and it turned out great
That is wonderful news! Glad you liked it!
Just made this and it wss absolutely delicious!
Great! I’m so glad you enjoyed it!
What cut if meat do you start with?
Generally a chuck roast but just about any kind that is on sale is fine with me
This is cooking n my crockpot now
Did not see anything about wearing the meat first in the recipe…only AFTER I scrolled thru the comments. Hope it comes out good….my husband is looking forward to the meal at 5!
Praying for tender roast!!!
🙋🙌😕👍
SEARING THE MEAT….
UGH Autocorrect
I love this jelly, I made it for my coworkers. Thank you for the recipe!!
Can you add fresh mushrooms to this recipe?
I am actually making this right now for my family can’t wait to try it in about seven hours will definitely return back for a comment about you know how this turned out thanks for the recipe
Well is been 7 hours now and my family and I absolutely loved this recipe. It’s definitely a keeper thanks for the help my mother in-law as well as my father in law loved it the talked about it all night
Hi Kelli,
I was planning on making Beef Pot Roast in my Crock Pot tomorrow for dinner but from another recipe that I had until I saw yours and read through the comments for variations and clarifications to questions that I had that have already been answered by you. The only other question that I saw and also was wondering is ; Can you add whole or sliced Mushrooms to this recipe?
Addendum:
With regard to adding whole or sliced Mushrooms, I was also referring to fresh mushrooms as was Jennifer Carlson (posted back on February 13,2020). If fresh mushrooms could be added, would you suggest adding them at the beginning or the last hour or so? Please advise. Thank you.
Yes! You can add fresh mushrooms but I would add them sliced during the last hour — at least that’s what I do — If you add them at the beginning they will most likely meld into the sauce and you’ll never know they were there! It will be great! Enjoy! Kelli
This recipe is home run. Instead of 2 cups of water I used 1/2 cup of red wine and 1 1/2 cups of water. My company loved it and I will make it again.
Huge hit!!!
Can this be made in an over? I dont have a slow cooker.
Yes! Just put it in a dish or dutch oven, cover with foil or a lid and put in a preheated oven set to 350 for 20 minutes per pound of meat. Then take foil off for 15 minutes. Meat should register 175 F to be done.
I’m looking for a recipe to make roast beef sandwichs with. How do you think this recipe will turn out without the potatoes and carrots being added? I’m thinking I will add chopped onions to the bottom of the crockpot. Thank you for any suggestions you may have.
Barbra — great question! And I am happy to tell you it will work just fine! I often make the roast in this recipe without potatoes and carrots and serve with salad or, as you suggest, make beef sandwiches. Sometimes open faced with gravy on top and sometimes not. It’s very versatile! Good luck!
Can you brown the meat before adding it to the slow cooker?
Yes of course!
I’m not usually a pot roast fan, but this was fantastic! It was so easy to put together, and the flavor was wonderful! I cooked it for 9 hours and it was fall apart tender! Definitely a keeper! Thanks for the recipe!
Don’t have dry Italian dressing…any suggestions?
I actually made this yesterday! When I don’t have dry Italian dressing, I just omit it. It’s fine without it but just not quiet as tasty! Good luck!
Nice and easy. I don’t add the veggies as I have never liked crockpot mushy veg. I do add a splash of Worcestershire and use beef broth and serve over egg noodles.
A side of lightly steamed mixed vegetables and a salad makes for a perfect weeknight meal.
Thank you.
Don’t the envelopes of gravy, Italian dressing & onion soup make it taste super salty? I was thinking of just using partial packages. What do you think?
Yes! I am sure that would be just fine! Thanks for asking. Kelli
How many LBS o roast per those 3 envelopes?
I would say up to a five pound roast before you add 3 more envelopes.
This looks delicious, but my husband and I are not big beef lovers. We do like Brisket so I was wondering if that would work too!
Yes! That would work just fine. Give it try — you’ll like it! Kelli
Delicious and easy ! This is definitely a keeper !!
