Did you ever think about smoking garlic? It is wonderful and can be used in chili, soups and stews but my favorite way to use this is in a roast either beef or pork that I cut slits in and then smash the cloves into. It gives it a very nice smoky flavor when you do not have time to grill or smoke a piece of meat all you have to do is add these little gems and you get the light taste you wanted! It’s very simple and doesn’t take much effort at all – enjoy!
How To Smoke Garlic
You will need:
Whole heads of garlic
Olive oil – 1 Tablespoon for each head
Salt
Aluminum foil
1 jar with a lid
Smoker – if you don’t own one and want to make it go here for a tutorial.
Directions:
First you need to take the heads of garlic off like this:
Then set the head in a piece of foil and pour 1 tablespoon of olive oil and salt like this:
Crumple the foil up around the garlic so the olive oil won’t leak out.
Put on a tray and then into your smoker for about an hour.
Take them out and let them cool, put them in a jar like this and drizzle the olive oil on top,
put the lid on tight and keep in the fridge for up to a month!

When we lived in KL, most of the supermarkets had smoked garlic along side the regular and I would buy it occasionally, just for something different. They dry smoked it somehow though because it was out in bins, whole, just like the normal stuff. It never occurred to me to ask how or where it came from. Yeah, I know, sad. The flavor is remarkable and adds a lot of depth to roasts and stews. I wish I had some of yours in my fridge! It would be gorgeous spread on some crusty bread.

I’ve cooked garlic wrapped in foil in the oven before, but never in the smoker. Does it really pick up smoke flavor being wrapped in the foil?

My brother did this at Thanksgiving last year then put the garlic into mashed potatoes- delish! Thanks for the reminder, I need to try it on my own!

No – honestly it’s not. Wrapping the foil around it allows smoke in but it doesn’t overwhelm it at all – best garlic I ever used!

My smoker doesn’t have a degree on it — I would say it gets about 275 F though.
What temperature do you set your smoker at ? Our is electric. Sounds wonderful ! Canβt wait to try

Try a Pinterest search for DIY stove top smoker or even use a pan. Saran wrap can be used to seal in the smoke, it will peal off afterword, Oven cleaner will make for quick cleanup. Even a metal soda cracker tin will work. A laser thermometer will help with temperature control, 200 degrees may be on the high side but experiment. I am also reading the smoked onion, pineapple, baked beans, meatballs, even plant based meats and even pizza.
