Luscious Little Lemon Pies from Kelli’s Kitchen

Remember the dissolution of Hostess? Mr. Picky Eater just loved those Hostess Lemon Pies. Remember my Small Fried Pies? I married the two with the help of a recipe @ Food Lust People Love and made him very happy! First, I made Stacy’s Lemon Curd recipe with these ingredients:

LUSCIOUS LITTLE LEMON PIES

2 lemons
2 eggs
1/3 Cup sugar
¼ Cup cold, unsalted, cut up butter
2 teaspoons cornstarch
Put the butter back in the fridge and zest the lemon like this:

WAY more than this – pix is just to show you what I meant!

Put the sugar, juice of the 2 lemons, zest, and cornstarch into a double boiler on low heat and stir until it thickens.

Add the butter and let simmer about 2 minutes more. It’s done!

Then, using a pre-made pie crust and the screw-top lid of a canning jar (because I couldn’t find my biscuit cutter) I cut out little pies.

With ice-cold water on my finger tips I wet the outside edge around the newly cut pieces, placed a scant teaspoonful of lemon curd in the middle, turned one side into the other and used a fork to seal the crust. One small slit in the middle of each pie.
I brought one inch of oil to 375F degrees in a heavy skillet I placed several pies in and allowed to brown on each side. Generally, 3 minutes and flip.

Let the pies drain on paper towels while making the glaze:
1 teaspoon softened butter
1 Cup Powdered Sugar
½ teaspoon vanilla
3-4 Tablespoons of milk
Whip up with a fork and drizzle over warm pies.
These are tart and sweet and warm and gooey.

    Oh, these look wonderful. Personally, I never cared for Hostess products. These little pies look scrumptious.

    Oh, my goodness! Fried lemon pies! Those look fabulous, Kelli. When I was little, lemon-filled was always my favorite doughnut so I am sure I would adore these. And thanks for the link love!

    Thanks for these. I looooove lemon! I have a problem getting my zest small enough that there aren’t little bits in my filling, though. I don’t like those little bits. ๐Ÿ˜€ Any advice?

      Yes! Surprisingly I do but it’s because I have the same trouble as you – I can’t get that peel grated small enough. One day I was cruising the spice aisle (about Christmas) and I was lucky enough to come upon a McCormick section that offers Lemon Peel and Orange Peel. Yes, it’s dried and it’s about the size of granulated sugar. It has that zesty taste and it completely disappears in whatever you are cooking! I used so much, I was out by the time I made this lemon curd so I had to “rough” it! ๐Ÿ™‚ I suggest you get some of that and make your busy like 50 times easier! Let me know what you think!

        Thank you! I will be on the lookout for that. I live in a very small town, but since it’s McCormick I should be able to find it. I really would like to have that full lemon flavor that you get with zest, I appreciate your help. ๐Ÿ˜€

          I always do what I can – because I need all the help I can get! ๐Ÿ™‚ I actually got this in my hometown and the population there is about 30,000 at the Homeland store there. It’s a regional grocery store chain so I bet you can find it, or order on Amazon! I love Amazon!!

    Thank youuuu I love little lemon pies but I don’t like store versions, they taste so plasticky n all!!!! I thought I would never enjoy that flavor of decadence from the halcyon days of my youth .. ha!! But now I shall ๐Ÿ˜€
