Strawberry Cake with Lemon Icing

First, I want to thank everyone for your good comments, thoughts, and prayers during this time of loss for our family. I want to share a quick recipe that I made accidentally last spring for my mom’s women’s group. It was a hit with those ladies so I made another today to go with the pulled pork we took to Top Girl’s in-law’s home. When I got a call from Top Girl saying the family wanted the recipe for such a great cake, I knew I must write a post – It’s quick and easy and I bet you have everything you need in your pantry – well, maybe you do! 🙂 I posted about the cake the first time here but just now am telling you how I did it.

Strawberry Cake with Lemon Icing

First, you need 1 strawberry cake mix with pudding in the mix. Prepare as directed and put in a bundt pan, cooking for directed amount of time.

You will also need 1 can of vanilla icing.
Lemon extract.
Yellow food coloring.

Using a spoon, mix up the icing really well.

Add 1/2 teaspoon of lemon extract mixing well.

Add 20 drops of yellow food coloring mixing well again.

After you have done that, place the can in the microwave for 10 seconds.

Stir really well after it comes out of the microwave and pour over cake.

It comes out looking lovely, spring-y, and very tasty!

    It is in the 20’s here and there is a foot of snow on the ground so I like your thinking. I’ll keep telling myself “spring is coming” the next time I shovel the walk. Your cake does look like spring.

    Such a lovely, spring-like and hopeful cake. ๐Ÿ™‚ Here in New York we’ve only just begun to see our lowest temperatures with much worse still to come for the next couple of months. This week was so frigid even the dog was cold!

      That’s pretty darn cold! It’s been below 50 here for about 2 weeks and that makes it frigid to us – but we heard Feb. will be even colder for longer. Not my kind of winter so I’m already dreaming of spring.
