Before I tell you about the delectable sandwiches we had this weekend, I want to show you the projects Mr. Picky-eater and I completed for the upcoming 4-H Foundation Fundraiser on October 8, in Tulsa. Mr. Picky-eater and Lawyer Boy play in the Golf competition each year and they also generally purchase some of the silent auction items. This year, we are contributing by request of Oklahoma Representative Joe Dorman, who really loved our 4-H milk can/tractor seat chair. The first thing I did was go to the 4-H website and purchase a snugglie and a hoodie sweatshirt to use as upholstery. Then we had to find the perfect venue to present the items. When we bought the chair and stool, they were kind of ratty looking – tell me how you think we did!
Here is the chair that was painted black and had deep purple satin upholstery when we bought it for $10 at a flea market.
Here is the stool that had the same black base it has now and leopard skin covering when we purchased it at a yard sale for $18.
Now, on to the recipe. I just love The Country Cook, don’t you? I participate as often as possible in the Weekend Potluck offered by her, The Better Baker, The Sunflower Supper Club, Meet Penny, Life as a Lofthouse, and 4 Little Fergusons. Friday The Country Cook posted this recipe on Face Book. It looked so good I knew I just had to make it THAT DAY.
Slow Cooker Lower Calorie Italian Beef Sandwiches
These are the ingredients you will need:
1 chuck steak
1 package dry Good Seasons Italian Dressing
1 Cup Beef Broth
1 Whole Wheat Hot Dog Bun
1 Tablespoon shredded cheese
1 serving green pepper
1 serving onion
1 serving cherry peppers
1 serving Checkers and Rally Seasoned French fries
1/5 Tablespoon Heinz Ketchup
As you can see, I am using chuck steak that is still frozen. I put it right into the crockpot.
Then I cut up onion, green peppers, and garlic. I did this in order to give me more to eat at about 2 calories per serving.
Then I mixed up the dry Italian dressing with 1 Cup of beef broth and some cherry peppers from a jar.
Then I put all the kids into the pool and turned the slow cooker on high for 3 hours, then turned to low for 5 more.
Doesn’t it look delicious?!?!
In the meantime, I took some Checkers and Rally seasoned French fries from the freezer and cooked them in the oven.
Then I took two of the 80 calorie each whole wheat hot dog buns and grilled them in the skillet:
When done, they looked like this.
I sprinkled 1 Tablespoon of shredded cheese (from a bag) on top.
Then I took the French fries out of the oven, I put the sandwiches on the baking sheet and back into the oven for 5 minutes until the cheese melted.
And this is how I made the Italian Beef Sandwich meal! The best part is that it keeps the kitchen cool in the summer and is warm and comforting in the winter!

for me too! I had two slow cookers until yesterday and then I found a brand new 3-quart one at a yard sale for $1 so I got it – going to use it for dips and those meatball/little smokie things we all take to potlucks.

There are so many things I like in this post, I don’t know where to begin. The re-purposed 4H chairs are great and the slow cooker recipe sounds like something I’d love. I’ll also have to look for the peas and chocolate almonds – I love a combination like that.

You will love ’em! That scale, I promise, was $1 at the Dollar General Store several years ago and it’s worked wonderfully ever since. I have a really big one that I got at a Wms-Sonoma Outlet Store but the little one really works!
