Smoked Rib Tacos/Kelli’s Retro Kitchen Arts

A week or so ago, I smoked some ribs and they were delicious! We had some left over and Mr. Picky-eater wanted to have more so I decided I would make something different with them.

I took some tortillas out of the freezer (I buy in bulk cheaply and freeze them – beautiful!), grabbed a green pepper with an onion and went to town! So, first I sautéed the onion and pepper until it was soft and while that was cooking, I pulled the ribs off the bones and cut it into small pieces. Then I added them to the vegetables to heat up.

Now, doesn’t that look good? It only took about 20 minutes start to finish and while it was leftovers, it sure didn’t taste like it was!

These are my two with all the fixings on it – lettuce, tomato, onion, cheese and buttermilk dressing on one and Catalina on the other —- YUM!!

    I put everything on tortillas. I am sure my family would love this one. I would never have thought to make tacos out of ribs, but why not. As usual, love the pictures.
