Drambuie Surprise Jam

Drambuie Surprise Jam

It is so hot here I do not want to go out and pick any fruit that may be surviving this drought. I put up some strawberries in the freezer back in May. Pulled them out and decided to make a special concoction. Here is the recipe.

Drambuie Surprise Jam

12 Cups cleaned and sliced strawberries
6 Cups sugar
3 small fresh lemons
1/3 cup fresh squeezed lemon juice
2 1/2 ounces Drambuie
1 box Pectin

Directions:

zest about 1/4 cup lemon zest placing that, the strawberries and pectin into a non-aluminum saucepan.
Bring to a hard boil.
Add sugar bringing to hard boil again. Continue stirring and boiling for 1 full minute.
Take pot off burner and stir in Drambuie.
Ladle strawberry jam into sterilized 1/2 pint jars and cover with hot lids and screw tops.
Process jars in simmering hot water bath canner for 10 minutes.
Take out of canner and place on a countertop with towel, out of drafts for up to 24 hours.
Remember, the hard boil for 1 minute is what makes the jam “set” so don’t skimp on the boil time!

Mmmmmmmmmm………..tasty!

    when do you add the 1/3 cup of lemon juice?
