Welcome to Pi(e) Day hosted by Terri from Love and Confections! Pi Day is celebrated every March 14 by math fans around the world – and also bakers and pastry chefs. Pi is an non-repeating, infinite number represented by the Greek letter π, and used to represent the ratio of the circumference of a circle to its diameter. Today, March 14, 2015, is an extra special Pi Day, because at 9:26:53 AM it creates the “Pi Moment of the Century”. The first ten digits of Pi are 3.141592653 (3/14/15, 9:26 AM and 53 seconds). This exact date and time happens once every hundred years – a once in a lifetime moment for most of us. How cool is that? Today, 20 Food Bloggers have gathered and want to celebrate the fun of Pi by creating their own sweet and savory pies to share with you. Hope you have a delicious day!
Guess what today is? It’s one of those most wonderful days of the year! It’s Pi Day. I know, Pi is Greek word for the circumference of a circle. I assume Pie came from the word Pi – and so since I cannot possibly tell you about 3.1415….. I will tell you about how I and about 20 other bloggers love PIE! At the bottom of the post are a list with links to all the participating bloggers and the scrumptious pies they have prepared. I have made Kentucky Derby Pie because soon it will be time for the Kentucky Derby and at about the same time, the series finale for one of my all-time favorite shows which is set in Kentucky – it is called Justified and I will miss it greatly! Anyway, this is my homage to both.
Kentucky Derby Pie
Ingredients:
3 Extra large eggs
2 Tablespoons oil
1 Tablespoon Bourbon Whiskey
1 teaspoon of vanilla extract
1/2 Cup All-Purpose Flour
¾ Cup White Sugar
¾ Cup packed Brown Sugar
1 1/8 Cup unsalted Butter, soft
12 ounces chocolate chips
1 nine-inch unbaked pie shell
Directions:
Preheat oven to 325F
Beat eggs in a large mixing bowl until foamy (it’s about 3 minutes), add oil, vanilla, and whiskey just until incorporated.
In separate bowl whisk flour and both sugars together then beat into the egg mixture then add butter and incorporate all.
Gently stir in chocolate chips by hand.
Pour mixture into the unbaked pie shell (that is in an accommodating pie dish).
Bake for about an hour – or until a sharp knife comes out of the center of pie clean.
If your crust starts to get too brown, put some foil around the crust so it won’t burn.
Set dish on a wire rack and allow to completely cool before serving.
Enjoy! Now, take a look at the wonderful sweet and savory pies below! Happy Pi Day!

Now this is my kind of pie! Did I tell you that I was invited to the Kentucky Derby last year? A big long story, and totally bummed that I couldn’t make it, but I’d much rather sit home and eat a slice of this pie. (That’s my story and I’m sticking to it.) Oh, and I’ve been thinking about starting Justified from the beginning….worth it?
Kelli
OMG YES!! My daughter didn’t think she would like it, but seriously she is as hooked as me now – And Rocket loves to dance to that hillbilly music at the beginning! ๐ He knows his ancestors……..and he’s got some hillbillies on my side. ๐ Thanks for the compliments on the pie!
Amy | Amy's Cooking Adventures

Jennifer
Holey Moley…this sounds amazing! And please don’t remind me about Justified leaving us. I gotta admit…I’m worried if our boys (or Ava) are gonna make it out alive! And girlichef, Justified is SO worth it!
Kelli
I know – I don’t know if they’ll make it out Jen – but they just have to!! ๐ Thanks for the compliment on the pie!
Liz

Stacy
I’ve never heard of Kentucky Derby Pie, which makes me sad because now I know what I’ve been missing all these years. I’m pinning this one directly to my Recipes to Try board! (As well as Pies and Tarts, of course.)
Kelli
Thank you Stacy!!
Erin @ The Spiffy Cookie
I’ve never had a derby pie! Shameful too because the derby is usually the same weekend as my birthday so you’d think I would have made it my bday dessert at some point.
Kelli
It’s really great!
Nancy @ gottagetbaked
I’ve learned more about pi in this blog post than I ever did in high school math, Kelli! And I’ve never heard of Kentucky Derby pie – it looks so delicious I’m wondering where it’s been my whole life! It’s amazing how the batter bakes up crisp on top and the chocolate chips create that gorgeous, chocolatey layer right in the middle.
Kelli
It is amazing! So delicious – I’m thinking of making it again! ๐
Choc Chip Uru
I didn’t even know what a derby was!! But if there is a pie as good as this, I am in ๐
Cheers

Kelli
