My friend Pam over at Pa-Blam was tagged in a blogging world party game called 5 Things Meme. She was supposed to tell us 5 things about herself that you most likely don’t know and tag 5 more people. It made her so nervous to tag others, she just told us to consider ourselves tagged. In an effort to keep her from having seven years bad luck……..no wait, that’s a chain letter right? Do they even send chain letters anymore? Or is that breaking a mirror? Oh……..back to The 5 Things, I’m going to list mine and then trust that you will pass this along on your own blog, if you are a blogger.
1. I am a 6th generation only-child and college graduate, although I am the first female. Top Girl makes a 7th generation. (The boys are my step-sons)
2. I had a pet rooster named Tuffy who would do the Watusi whenever I played 50’s music in the chicken barn…..yes, our chickens had their own barn that was nearly as big as our home, plus an acre to run around on.
3. I got my first motorcycle at age six. Here’s a picture of Mother Kalamity on her motorcycle in front of my grandparent’s home. Check out her hair and coat!
4. I slept with Mrs. Beasley for many more years than most kids sleep with a stuffed animal or doll – in fact, my parents worried about it but never said anything.
5. I love bluebirds!
Okie – dokie, we are done. Now on to the recipe which is Mother Kalamity’s – mother can make a few really great dishes and this is one of them. It is not a dense or heavy meatloaf, it is loose. She has made it the same way my entire life and now I make it that way too. We eat it about twice a year and Saturday night was one of them. Sunday was my favorite part: Meatloaf Sandwiches!
Ingredients:
1 ½ pounds ground beef
1 Cup milk
½ a sleeve crackers crushed
½ cup chopped onion
1/3 cup green pepper
2/3 cup Ketchup
1/3 cup Salad Oil
1 egg
½ teaspoon each; salt, pepper, cumin
Mix it all together lightly because if you “handle” it too much, it will be tough.
Form into a loaf, cover with more ketchup if you like
Cover with foil and bake at 375 F for 45 minutes and then uncover and continue baking for about 30 more minutes – but keep watching and don’t let it burn!
Put meatloaf out and let it rest for about 15 minutes.
The next day, slice leftovers, grill a bun, add the accouterments and enjoy!

I had a pretty awesome motorcycle as a young kid, too, but my mom didn’t have one. Nor did she have an amazing jacket like that. Where can I get one of those??
I make my meatloaf the same way… except I use breadcrumbs and barbecue sauce. I’m really curious about the cracker crumbs now, though! I bet that adds more flavor than regular breadcrumbs 😉 Amazing photos!

Thank you! You can get a coat like that from any 1960’s couch! Mother thought she was pretty darn spiffy looking when she wore that. I wish she still had it, I would sell it at a vintage store!

I think our moms are related. I’ve seen a picture of my mother somewhere on a motorcycle that looks almost identical. It’s a ’67 Honda and my parent still have it!
I make our meatloaf pretty much the same way but I’ve always used oatmeal.
Now I’m hungry for meatloaf.

Yep, I remember it was a Honda – but I honestly couldn’t remember the year. Mom was always so funny wearing that head scarf so the Oklahoma wind wouldn’t blow it around. Ha! Like that would help. Meatloaf is really great. I’ve never tried oatmeal in mine – I think I will do it next time!

I should be more clear. I use oatmeal, egg and 1 package of Lipton Onion Soup mix. Usually generic onion soup mix.
I know some people think 1 package is too much or sodium overload but since I normally use 2lbs of ground beef or turkey, it’s fine. Or at least in our opinion it is.
I use this for meatloaf, hamburgers, meatballs…

Just bad luck I guess – Maybe you can get him some help soon. There are rehab programs throughout the country you could contact for a 12-step program! 🙂 Heh, heh…. Maybe he haven’t had the “right” meatloaf yet.

Nice meatloaf and I’ll bet the sandwich was delicious too! I had a little Honda 70 when I was a girl. Motorcycles are a lot of fun when you live near a desert (Peru) and can ride the sand dunes. Your house is exactly like my grandparents’ in Louisiana! You won’t believe it! I need to find a photo and send it to you. I gotta say, Mrs. Beasley is a little scary but I can see why you loved her as a child. It’s kind of like having your own personal grandma around all the time, I guess.

I would LOVE to see a picture – my first was a Honda 50! It looked a little like a red bumble bee. I flipped it into a lumber pile once and I have a exhaust pipe scare on my hiney – it burned right through my clothes….yeah, I’ve always had trouble with limits! 🙂 I think Mrs. Beasley was more about me being an only child in the country. Just me and the animals most of the time and I think she just kept me company. running around in the desert sand sounds like loads of fun!

My mom never made meatloaf sandwiches and if she did,they never would have looked that good. Now that what most people call grilling seasoning is starting up, have you ever tried grilling or smoking your meatloaf? Try it some time. The smoke will just add another level.
