Pecan Cobbler

Ingredients

  • 3 refrigerated pie crusts
  • 2-1/2 cups light corn syrup
  • 2-1/2 cups packed brown sugar
  • 1/2 cup melted butter
  • 4 tsp. vanilla
  • 6 eggs lightly beaten
  • 2 cups chopped pecans
  • 2 cups pecan halves
  • 1 egg beaten with a splash of water to put over top crust
  • Vanilla Ice Cream for topping

Instructions

  1. Heat oven to 425º F.
  2. Spray a 13" x 9" glass baking dish with nonstick spray.
  3. Remove two pie crusts from package and roll out to fit the baking dish. Trim edges.
  4. Blind Bake for 15 minutes at 425F.
  5. In a large bowl, combine corn syrup, brown sugar, butter, vanilla and eggs.
  6. Mix until well combined.
  7. Stir in chopped pecans.
  8. Spoon half of filling into crust.
  9. Remove the third crust from the package, and roll out to fit baking dish.
  10. Brush egg and water mixture into crust so it will brown and firm up.

  11. Bake 14-16 minutes or until browned.

  12. Remove from oven.

  13. Reduce oven temp. to 350º.

  14. Carefully spoon remaining pecan filling over crust.

  15. Arrange the pecan halves over the top and bake 30 minutes.

  16.  Let cool for 15 minutes.

Recipe Notes

Serve with vanilla ice cream.
