Carnitas with Avocado Corn Salsa!

Avocado Corn Salsa

Prep Time 20 minutes

Ingredients

  • 1 box of frozen corn
  • 1 jalapeno diced finely with seeds removed.
  • ½ small red onion can use white onion
  • The juice of 2 limes
  • 3 Tablespoons white vinegar
  • ½ teaspoon cumin
  • ½ teaspoon dried oregano
  • 1 teaspoon granulated garlic
  • Salt and pepper to taste
  • 1-2 chopped avocados

Instructions

  1. In a bowl, mix everything except the avocado together and toss then set in the fridge for about 20 minutes.
  2. Right before serving add the avocado.
