Fresh Apple Cake

Ingredients

  • 1 ½ Cups of Vegetable Oil
  • 2 Cups Sugar
  • 3 Eggs
  • 3 Cups All-Purpose Flour
  • 1 teaspoon each of Baking Soda and Salt
  • 3 Cups of Apples grated
  • 2 teaspoons vanilla
  • 1 Cup Chopped Pecans optional

Instructions

  1. Preheat oven to 350 F.
  2. Put oil and sugar in bowl and blend well with either hand or stand mixer although a stand mixer is preferred.
  3. Add slightly beaten eggs one at a time mixing thoroughly after each egg.
  4. Sift flour, salt, and soda then add slowly to the mixer. The batter will be extremely dry.
  5. Hand grate the apples and add to the mixing bowl, the juice from the apples will loosen it up now.

  6. Finally, add the vanilla.

  7. If using, fold in pecans with a spoon or spatula.
  8. Pour into 2 greased and floured dishes or pans. I used 2 regular bread loaf pans - 5x9x3 .
  9. Bake for 60 – 70 minutes. More or less time, depending on your oven so watch it, using a toothpick to test for doneness.
